PICKLED AJI PEPPERS
A beautiful large and long Pepper, the Aji Amarillo is one of the most popular Peppers in Peru, South America. It normally ripens to a bright Yellow or Orange. These were picked before they turned colors in the Colorado Autumn, and were then cut and pickled in the tradition of Jalapeno Peppers. They have similar heat, but a distinctive taste. Add to sandwiches, tacos, eggs, or just about any dish that needs a little spicy boost!
