Our 2024 Organic Garden Salsa spans a wide variety of Tomatoes and Peppers – over 200 plants. We had 75 varieties of Peppers. Some of them mild, hot, very hot, and even super hot varieties with 300,000 to 2,000,000 Scoville Unit ratings. We had 18 varieties of Tomatoes, with mostly Orange and Yellow heirlooms – which both reduces the acid content, and leads to a wider variety of shades and colors in our Salsas. UPDATE: We have now sold out of all of our Salsa batches from the 2024 season! We will still have a handful at the Fort Collins Winter Farmer’s Market at the Foothills Malls on Saturdays through 4/19/25. Look for our 2025 Batches to come out by September of 2025!
We produce each flavor of Salsa in small batches, usually with about 36-42 pints for each batch we make. In some cases, we repeat recipes from past years, but are always exploring new combinations of tomatoes and peppers we grow, as well as ingredients like onions and garlic, which we grow as well. We explore different ways to add sweetness as well, from traditional sources like honey, but also with things like Apple Cider Vinegar and different fruits!
